Thomas George, the distinguished Executive Chef of Bombay Brasserie at Taj Campton Place, brings a wealth of culinary expertise and a deep-rooted passion for food to the vibrant dining scene of San Francisco. Hailing from the picturesque state of Kerala in South India, Thomas grew up immersed in a rich tapestry of global culinary influences, which is reflected in Kerala's spice-laden cuisine.

I look forward to welcoming guests to our table, where each dish tells a story, blending tradition with innovation in a way that’s both familiar and entirely new.

Chef Thomas earned a Diploma in Hotel Management and Catering Technology from the Institute of Hotel Management Catering Technology in Kovalam, Kerala, followed by a Bachelor of Science in Hotel Management and Catering Technology from Indira Gandhi National Open University. His academic foundation provided a solid platform for his culinary ambitions.

Upon graduating, the talented toque began his professional journey with Taj Hotels, one of India's most prestigious hospitality groups. He started as a chef trainee at Taj Malabar Resort & Spa in Cochin, where his talent and dedication quickly propelled him up the ranks. His relentless pursuit of excellence saw him assume the role of Sous Chef and subsequently Executive Sous Chef at Taj MG Road, Bengaluru. Thomas further honed his skills and leadership abilities as Executive Chef at Taj Malabar Resort & Spa Cochin, and Taj Connemara, Chennai.

In 2023, Thomas brought his extensive experience and culinary vision to the United States, accepting the position of Executive Chef at Bombay Brasserie in Taj Campton Place, San Francisco. Here, he skillfully integrates his South Indian heritage with contemporary culinary techniques, focusing on fresh, high-quality ingredients. His philosophy emphasizes maintaining the integrity of each ingredient while enhancing its natural flavors with judicious use of spices, ensuring a harmonious and memorable dining experience.

At Bombay Brasserie, Thomas George is on a mission to establish the restaurant as one of San Francisco's premier dining destinations. His innovative approach and dedication to culinary excellence aim to leave a lasting impression on the city's dynamic culinary landscape.
